The Potential Of The Traditional Display Kitchen Elemen Application For Indonesian Culinary Restaurant

Abstrak
How to cook, the cookware, and the kitchen for Indonesian tradisional restaurant are quite interesting to be a spectacle for the visitors of traditional restaurant. So this article would like to explain some of the potential that can be done in a traditional restaurant which implements the display kitchen concept. Nowaydays, many restaurants both modern and traditional use display kitchen concept, because there are a lot of positive things that are found in restaurants that use these concepts, which are getting more trust from visitors regarding cleanliness and freshness. Currently, the purpose of people coming to a restaurant is not only to satisfy their appetite or to get a good price, but also hoping to have more experience that can be remembered and pleasurable. In this context the idea of how to cook Surabi as one of the Indonesian Traditional culinary was especially chosen to be applied in display kitchen. Through the reseach, the design concept of the display kitchen will be compared, using eksperimental method. The customer response are calculated by Reapeated Measured Anova, and the the result is display kitchen concept with Traditional concept which’s combined with high attractiveness is responded as the most favourable to the consumer. With this comparison it consists of several aspects of the design elements that have the potential to improve the quality of the atmosphere of a traditional restaurant. With Reviews These results, traditional display kitchen concept can be used for showing Indonesian cultural identity, so it has potential to support, especially for Indonesian Culinary tourism.
